Sweet potato fries

This is pretty much the same procedure as when I make celeriac fries. You can use butternut squash as well.

Peel, dice, oil, spice, and then bake in the oven at 200 degrees for 20-30 minutes. Or just use a skillet.

Creamy tomato soup

Norsk: 1 porsjon
1 sjalottløk, hakket
olivenolje
1/2 ss tomatpuré
1/2 boks hermetiske tomater
1,5 dl vann
1/8 terning hønsebuljong
1 ss rømme/crème fraîche
1 ts sukrin
salt og pepper etter smak

- Varm olivenolje i kjele, surr sjalottløk og tomatpuré til løken blir blank. Ikke svi.
- Deretter tilsett tomater. Kok til væsken er fordampet.
- Tilsett vann og buljong og kok i 10 minutter.
- Tilsett rømme, sukrin, salt og pepper (smak til), og jevn til suppe.

Forenklet: hiv alle ingrediensene (utenom créme frâiche) i en blender/food-prosessor og kok deretter suppa til den er av passe tykkelse. Rør inn créme frâiche mot slutten.



English: 1 portion
1 shalott, chopped
olive oil
1/" tbs tomato puree
1/2 can chopped tomatoes
1.5 dl water
1/8 dice chicken bullion
1 tbs crème fraîche
1 ts erythritol
salt and pepper to taste

- Heat olive oil in a pan and add the shalotts and tomato puree. Do not burn them.
- When the shalotts are glossy, add tomatoes and boil until the fluid has evaporated.
- Add water and bullion and cook for 10 minutes.
- Add crème fraîche, erythritol, salt and pepper (to taste), and blend into a soup.

Simplified: throw all the ingredients (except for the créme frâiche) into a blender/food processor and then cook the soup until appropriately thick. Stir in the créme frâice towards the end.

Banana pancake

A really nice and fluffy banana pancake. Next time I'll try adding some cinnamon. Because cinnamon, that's why.

Norsk
- Bland sammen 1 banan og 2 egg
- Smelt smør i en stekepanne på medium-høy varme
- Hell alt i stekepannen (hvis den er stor nok) og stek i 5-10 minutter
- Snu pannekaken og stek i ytterlige 3 minutter ca


If your jug isn't glowing, you're doing something wrong.

English
- Mix together 1 banana and 2 eggs
- Melt butter in a frying pan at medium-high heat
- Pour everything in the frying pan (if it's large enough) and cook for 5-10 minutes
- Turn around and cook for another 3 minutes or so



I don't want to hear a word that the avocado chocolate pudding looks like poo. Not a word.


It's delicious with banana chunks and strawberry jam

Norsk
Sjampinjong, skivet
2 sjalottløk, skivet
2 fedd hvitløk, skivet
1 tynn biff
salt og pepper
litt ingefærpulver
litt hvitløkspulver
litt sesamolje

- Stek opp sjampinjong og løk i smør/olje i en stekepanne
- Ha i biffen og stek på begge sider
- Krydre og rør inn sesamolje mot slutten av steketiden

"Ris"
Ca 200g blomkål, gurkemeie og salt

- mal opp blomkål, rør inn gurkemeie og salt, smørdamp i mikroen.

Mushrooms, sliced
2 shalotts, sliced
2 garlic cloves, sliced
1 escalope beef
salt & pepper
some ginger powder
some garlic powder
some sesame oil

- Stir fry the mushrooms in butter/oil in a frying pan
- Add the beef, fry on both sides
- Add spice and seasoning and stir in the sesame oil towards the end

"Rice"
About 200g cauliflower, turmeric and salt

- Ground the cauliflower, stir in the turmeric and salt, butter steam in the microwave

Egg pudding

Oh my god, why is this actually tasty?! Don't try to understand it, just accept it.

10 hardkokte egg, uten skall
1 boks (400ml) kokosmelk
søtning etter smak
1-3 ts kanel
2 ts vanilje

- Ha alle ingrediensene i en blender og bland til en glatt røre.

10 peeled hard boiled eggs
1 can (400ml) coconut milk
sweetening to taste
1-3 tsp cinnamon
2 tsp vanilla

- Put all the ingrendients in a blender and blend until very smooth.

Cauliflower soup

Norsk
200-300g blomkål i mindre biter
1/2-1 sjalottløk
1 fedd hvitløk
2 dl vann
75 ml fløte*
kyllingbuljong tilsvarende 1/2 ss kyllingfond**
pepper

- Ha blomkål, sjalottløk og hvitløk i en kjele med vann som dekker. Kok til mør.
- Sil av vannet til det måler 2 dl og hell dette, grønnsakene og fløten i en blender og miks.
- Hell suppa tilbake i kjelen, kok opp og tilsatt kyllingbuljong og pepper etter smak.




Here with garnish made of garlic and prawns with paprika powder, harissa spice, lemon pepper - stir fried in olive oil.

100-300 g cauliflower in smaller bits
1/2-1 shalott
1 garlic clove
2 dl water
75 ml cream*
Chicken bullion**
Pepper

- Add cauliflower, shalott and garlic to a pot and cover with water. Boil until tender.
- Pour 2 dl of the water, the vegetables and the cream into a blender and blend.
- Add the soup back into the pot, boil and add chicken bullion and pepper to taste




*Can be replaced by soy cream
**Can be replaced by vegetable bullion

So far I've only made this recipe twice, so I'll probably make a few changes to make it even more currylicious.

Norsk
Ønsket mengde sjampinjong i skiver
1/2 liten løk, hakket
2-4 hvitløksfedd, hakket/most
100-150g kjøtt (kyllingbiter/kjøttdeg, kalkun, biff...)
1 spisspaprika, i lange biter
1/4 boks hakkede tomater
1 ts tomatpuré
1 krm tandori masala
1 ts grønnsaksbuljongpulver
1-2 ts garam masala
1-2 ts mild curry powder
50g yoghurt (valgfritt)
60-100g kokoskrem (eller kokosmelk)

- Stek sopp, løk og hvitløk godt i smør eller olje.
- Tilsett så kjøtt og enten gjennomstek det først, eller fortsett å tilsett ingredienser med en gang:
- Tilsett paprika, bokstomat, tomatpuré, krydder, yoghurt og kokoskrem.
- Bland og småkok til det er så (lite) flytende som du vil ha det.

Blomkålris
- Ønsket mengde blomkål males til ris
- Ha en klatt smør i bunnen av en skål, dekk med "risen" og sett i mikroen på full guffe i noen minutter til det er spiselig
- Rør rundt med salt og gurkemeie
Dette er en god fremgangsmåte

Desired amounts of mushrooms, siced
1/2 small onion, chopped
2-4 garlic cloves, chopped/mashed
100-150 g meat (chicken, turkey, beef... mince or diced)
1 sweet pointed pepper, sliced
1/4 can of chopped tomatoes
1 ts tomato puree
1/5 ts tandori masala
1 ts vegetable bullion powder
1-2 ts garam masala
1-2 ts mild curry powder
50 g yoghurt (optional)
60-100 g coconut cream (or coconut milk)

- Stir fry mushrooms onion and garlic well in butter or oil.
- Add meat and either fry it all the way through first, or keep adding ingredients right away:
- Add peppers, canned tomatoes, tomato puree, spice, yoghurt and coconut cream.
- Mix it all and let it simmer until it is as (little) liquid as you like.

Cauliflower rice
- Ground desired amounts of cauliflower to rice
- Add some butter at the bottom of a bowl, cover it with the "rice" and microwave it on full power for a few minutes until it's edible
- Add some salt and turmeric and mix well

Lavkarbo kokosloff

Norsk
6 egg
100 g smeltet smør
2 ss Sukrin
1/2 ts salt
70 g kokosmel
1 ts bakepulver
2 ts fiberhusk

- Bland alt sammen til en "potetstappe-aktig" deig.
- Stek i en liten brødform på 180 grader i ca. 50 min.



English
6 eggs
100 g melted butter
2 tbs erythritol
1/2 ts salt
70g coonut flour
1 ts baking powder
2 ts psyllium seed husks

- Mix it all together to a "Potato mash-like" dough.
- Bake in a little bread tin at 180 degrees for about 50 minutes.

Scandinavian waffles II

A slightly more simplified version than the previous one. Approved by high-carbers as well.

Sukkerfrie, melfrie, glutenfrie og lavkarbo vafler

Norsk - 6 vaffelplater
200g kremost (Philadelphia)
2-3 ss sukrinmelis (evt. annen søtning etter smak)
Noen klyper vanilje
Noen klyper malt kardemomme
4 egg
1 1/2 ts bakepulver
1 1/2 ss fiberhusk

- Visp sammen egg og kremost til en glatt røre
- Tilsett alle ingrediensene og bland godt
- La røra stå og svelle til den blir litt tykkere enn vanlig vaffelrøre (spe på med fløte om den blir for tykk)





English - 6 waffles
200g cheese spread (Philadelphia)
2-3 tbs powdered erythritol (or other sweetener to taste)
A few pinches of vanilla
A few pinches of ground cardamom
4 eggs
1 1/2 ts bakingpowder
1 1/2 tbs psyllium seed husks


- Whip together eggs and cheese to a smooth batter
- Add all the ingredients and mix well
- Leave the batter to get a bit thicker than regular waffle batter (add some cream if it's too thick)
