Bread with cheese and walnuts

4 egg
5 d/200 g revet hvitost
2 ss mandelmel
3 ss pofiber
2 ss fibrex
1 ss fiberhusk
1 ts jbk
1 ss sukrin
2 ts bakepulver
1 dl fløte
50 g hakkede valnøtter
- Visp stiv luftig eggedosis av egg og sukrin.
- Hakk valnøtter og riv osten.
- Bland alt det tørre godt.
- Hell det i eggedosisen men du visper.
- Spe med fløten.
- Til slutt rører du inn osten.
- Ha deigen i en bakepapirkledt liten langpanne (gjerne på 26x26).
- Sett midt i ovnen på 175ºC varmluft i 20 minutter.

5 dl/200 g grated cheese
2 tbs almond flour
3 tbs pofiber (potato fiber(?))
2 tbs fibrex (sugar fiber(?))
1 tbs psyllium seed husks
1 ts locust bean gum
1 tbs erythritol
2 ts baking powder
1 dl cream
50 g chopped walnuts
- Whip eggnog of egg and erythritol.
- Chop walnuts and grate the cheese.
- Mix all the dry stuff well.
- Pour it in the eggnog while you whip it.
- Gradually add the cream.
- In the end, add the cheese.
- Put the dough in a parchment covered baking tray (preferably 26x26).
- Put in the middle of the oven at 175ºC convection for 20 minutes.
Successful variations:
1) Replace the walnuts with 100 grams of Brazil nuts
2) Add 50 grams of almonds (you might have to add 5 minutes too)
You could put them in muffin cups as well!
